Making Time

Life is hard. I remember saying that as a twenty-something with far less responsibilities than I have today and while it was true then, it feels even more true today. Despite all of the items on our to-do lists, it’s so important that we make time for the ones we journey through life with.

Every Friday during the summer, Wes and I would have a 30-45 minute date before we picked KJ up from daycare. Well, early-release Fridays went away with the warm weather, and Wes switched jobs so we no longer have our Friday dates; instead, we try to find moments throughout the week to call our own. Today that looked like a couple bags of groceries, a napping toddler, and a slice of time that felt serendipitous. I set a cute little table for two, we whipped up some quick vegan sides and a hot stack of Wesley’s famous crispy-edge blueberry pancakes and we lost ourselves in a lovely (much-needed) brunch-date.

(L-R) scrambled tofu with arugula and tomatoes, seasoned hash browns, wild rice with brussels sprouts, sweet potatoes and craisins.

this is clearly a ton of food, so not only did we get to brunch-it-up but we had leftovers for the week. #winning
